Better known as T-bone, sirloin steak is a particularly tender and flavorful cut of meat because its bone lends a lot of flavor to the meat. This cut of meat combines part filet mignon and part sirloin, making it so popular with meat lovers. To preserve all its flavor, we recommend cooking it medium or rare.

PREPARATION
Shallot butter
- In a bowl, mix all the ingredients.
- On a sheet of plastic wrap, place the shallot butter and form a cylinder about 4 cm (1 1/2 inches) long. Close the cylinder by tying both ends of the plastic wrap. Refrigerate for 2 hours or until firm to the touch.
Sirloin steaks
- Preheat the barbecue to high. Oil the grill.
- In a small bowl, combine salt, pepper, and celery salt.
- On a work surface, rub the spice mixture onto both sides of the steaks. Grill for 2 to 3 minutes per side for rare or continue until desired doneness. Let rest for 5 minutes.
- Cut the butter into slices. Place a slice on each steak. Delicious with pancetta-stuffed potatoes (see recipe)
