PREPARATION

  1. On a plate, rub the meat with the dry marinade. Let it marinate at room temperature for 1 hour.
  2. Preheat the grill to medium-high heat. Oil the grill.
  3. Brush the meat with oil. Place the meat on the grill and close the lid. Cook for 18 minutes or until a thermometer placed in the center of the meat registers 48°C (118°F) for rare. Turn the meat over a few times during cooking. Remove the meat and place it on a plate. Cover with aluminum foil and let rest for 10 minutes.
  4. Set the barbecue to high power.
  5. Drain the meat and return it to the grill. Cook for 1 minute on each side to brown it well.
  6. Serve the meat with the butter melted on top. Sprinkle with chives and fleur de sel.
