Haddock with Apricot Sauce Recipe. Serve spinach with the fish and serve with steamed rice. Sprinkle with sesame seeds. Quick and easy to prepare.

INGREDIENTS

PREPARATION

  1. In a large nonstick skillet, brown the fish in the oil for about 2 minutes per side, or until cooked through. Season with salt and pepper. Keep warm on a plate.
  2. In the same pan, bring the broth, jam, and soy sauce to a boil. Reduce for about 2 minutes.
  3. Serve the fish and cover it with two-thirds of the sauce. In the pan, off the heat, add the spinach to the remaining sauce and mix well. Adjust the seasoning.
  4. Serve the spinach with the fish and steamed rice. Sprinkle with sesame seeds. Garnish with cilantro if desired.
