To cook it to perfection:

  1. Brush the beef with olive oil and season with salt and black pepper. Let the meat rest for 15 minutes at room temperature.
  2. Heat a large frying pan over high heat. Sear the meat for 30 seconds on each side, add the butter and spoon over the sauce. Reduce the burner to medium heat and cook for 4 to 5 minutes on each side. The outside of the meat should be well grilled and crispy. Finally, let rest for 4 to 8 minutes over low heat, covered, or in the oven at 325°F. Adjust the time to your preference, medium rare or well done.
